It's all about the fish and the sake. I once visited a cool little sake bar in NYC. Had to climb down some stairs and ring a bell to gain admittance. The place was a dark little basement with tables jambed together, grafitti all over the damp concrete walls, the place run down and dank, but oh! What a place! Sakes galore and all so different. Served with cold soba noodles, live oysters or a sliver of fresh raw fish. We just don't seem to have that here in Philly. I started this group to bring a bit of that adventure to our turf. Shrimp heads, Salmon toro, fish so fresh it's still moving when it's sliced. Good cold sakes, sometimes served in elegant Japanese pottery or square cedar cups with a pinch of salt, not the cheap hot stuff that tastes like kerosene. Sushi is so grand, but we're only scratching the surface. Let's make some scratches together.
